linguine with tomatoes, brie & basil



Last night, Mireille and I made my stepmom's Linguine with Tomatoes, Brie and Basil. It's one of my favorite dishes of my stepmom's, which we usually only have once a year, making last night a special treat! It is a very common dish but a tasty one nevertheless. 

Ingredients: 
1 lb. brie, skinned and cut up 
1/2 cup olive oil  
1 cup fresh basil leaves, chopped 
4-5 fresh tomatoes, chopped 
2 tsp. salt
1/2 tsp. pepper 
1 lb. linguine 
fresh grated Parmesan cheese 
3 cloves garlic, finely chopped 

Preparation: 
Mix oil, brie, tomato, basil, garlic, salt, and pepper. Let stand until room temperature or for a couple of hours out of refrigerator. Cook linguine and mix with sauce. Serve garnished with Parmesan and more fresh ground pepper. Serves 6-8.

life's a peach





This week Mireille and I made Peach-Ginger parfaits from Williams-Sonoma's The Kid's Cookbook. The dessert combines a few of our favorite things: cookies, fruit, and whipped cream. The lightness of the whipped cream mixed with the sweet taste of the fruit and the zest of the gingersnaps is a perfect combination of sugar and spice that melts in your mouth. The preparation is quick and easy--an ideal treat for summer!
